Wash the bulgur wheat in a colander. Drain very well in a colander and then by squeeze the bulgur wheat by hand to get rid of any excess water. Tabouli salad or Tabbouleh is a simple Mediterranean salad of very finely chopped vegetables, lots of fresh parsley and bulgur wheat, all tossed with lime juice and olive oil. - Sauté the grated garlic and olive oil until fragrant, then let cool.
- Rehydrate the Bulgar flour. Soak the flour in a little more salted water than flour. It should be a little firm.
- Finely chop the parsley.
- Thinly slice the green onions. Finely chop the mint leaves as well.
- Put Steps 2 - 4 in a bowl with the chopped tomatoes and sprinkle with lemon juice.
- Add the garlic olive oil from Step 1 and mix well, being careful not to crush the tomatoes. Season with salt and pepper to finish.
