- In a pan take oil and heat it for tempering. Add cumin seeds and mustard seeds to it.
- When the mustard seeds crackles add the curry leaves, chopped green chillies and chopped onions to it. Cook till onions turns pinkish.
- Now add all dry spices. Then add the smashed potato and chopped tomatoes to it. Mix everything properly. Cover the pan and let it cook for about 8-10 minutes.
- Once cooked, smash a little the ready bhaji using the back of the spoon. Serve the bhaji with paratha or bread.
