Shorba is the kind of soup which has roots connected with ancient Persia. In Indian cuisine, it is from Mughal Empire. Tomato Shorba is an aromatic spicy shorba flavoured with some whole spices and coriander leaves. Tomato gives an excellent colour and tanginess to the dish.

  1. Oil the tomatoes and garlic and roast on medium flame. Remove the skin and chop tomatoes, when cool down. Chop roughly garlic also.
  2. Heat oil. Saute bay leaf,cloves, cardamom, cumin seeds and cinnamon powder.
  3. Add chopped garlic and grated ginger saute,till rawness goes.
  4. Add chopped tomatoes, turmeric,chilli powder, salt and crushed black pepper. Saute till aroma come out.
  5. Cool down and sieve on a stainer. Collect the masala tomato pulp in a sauce pan. Add 2 cups of water, boiled carrot, peas and boil for 10 minutes.
